This salad gets rave reviews and its very simple.
– Near East Quinoa Blend Red Pepper , Basil ( two boxes )
– 1/2 can chick peas (drained and rinsed)
– 1/2 cup feta cheese crumbled
– 1/2 cup roasted red pepper from jar or fresh
– 1/2 large zucchini diced
-1/2 cup silvered almonds
-1/2 cup Greek Dressing ( I use Ken’s)
Cook Quinoa blend according to box, pour in mixing bowl and add dressing. Put in fridge for 30 minutes. Then tossed remaining ingredients. Chill until served. Serves 8.
Also add olives if you like and can be made vegan leaving out feta and using an oil and vinegar instead of Greek dressing.
