My Mother loves scones so, I combined different recipes to suit her needs. I go with a dried cranberry/sliced almond/ orange zest for flavors, but have tried raisins , lemon zest and cinnamon, all taste great. Ingredients: – 1 cup flour – 1/2 cup sugar -1-1/2 tsp baking powder -1/8 tsp salt -1/4 cup cold butter cubed – 3 Tbls milk – 1 egg beaten – 1/4 cup dried cranberries -1/4 cup almonds , pecans (optional) – zest of orange, lemon, lime plus Tbsp juice (optional) -1/4 Tbsp course sugar How to: Preheat oven to 425 degrees Combine flour, sugar, baking powder and salt in medium bowl, stir with whisk to break lumps. Cut in cold butter with fingers until coarse crumbs. Make a small well and add milk and egg. Stir slightly, then add cranberries , zest , nuts. Turn onto a floured surface; knead, then pat into 6 inch circle. Cut 8 wedges for small scones. Place wedges on cooking sprayed baking sheet . Brush with remaining egg, sprinkle with course sugar. Bake for 12-15 minutes or until golden brown.
